Help Me Beet the Habit!


Every time I see beautiful beets at the green market I fall in love with them. Beets are my favorite color. They are tastey. So I buy them....and proceed to watch them rot in my fridge. It's becoming my little ritual.

How do you cook beets? I like to eat them cold maybe with dressing on it. Any ideas? Help save innocent beets from dying in my fridge!

After growing up with beets for Friday dinner - cooked but cold I have refused to eat them. Maybe if someone had a tasty recipe . . . no, I doubt it.

I grew up with pickled beets which I don't particularly like. But last summer I had the most amazing Indian beets...I don't have the recipe but if you have an Indian cookbook maybe you could find it...or with google.

roasted with a little olive oil and kosher salt. and throw in some asparagus to roast as well. top with a little shaved parmesan

The Internets to the rescue! The other day, Jennifer over at Last Night's Dinner made what she called a beet “carpaccio”, red and golden beets sliced as thinly as possible and steeped briefly in vinegar, then mixed with olive oil, chopped scallions, a little fresh lemon thyme and some salt and pepper. You can simplify this or add even more or different stuff, but it sounds pretty good. I'm not a big fan of beets myself--a bit too "earthy" for me--but I'm trying to get over that; The New York Times just named them one of The 11 Best Foods You Aren't Eating.

I also grew up seeing a jar of pickled beets on my grandmother's table. I never tasted them until years later and I gotta tell you.. they aren't something I want to even try and develop a taste for. Although, I agree with you about their color. Love it!

Let us know if you try cooking them tho.

I remember my mom simmering them and then drizzling a dressing over them while they are still warm. (maybe italian??)

i love them boiled, cooled, and served in a salad with roasted hazelnuts, oranges (preferably blood) with sea salt and unfiltered (green!) extra virgin olive oil.
